Couscous Salad

Equipment                                 Ingredients

measuring cup                           1/2  cup of couscous

kettle                                       just under 1  cup boiling water

tablespoon and fork                  1  dessert spoon lemon juice

dessert spoon                           2 dessert spoons olive oil

bowl                                        ¼  green pepper

chopping board                         1 tablespoon tined sweetcorn

scissors                                   1 spring onion pepper

 

Very carefully   pour the boiling water over the couscous (remember Hot Hurts!), stir with fork, cover and leave for 5 minutes then use fork to fluff up.

Leave uncovered to cool.

 

Trim and cut the salad onions into small pieces using scissors. Add diced pepper ( you can also cut this up with scissors, or just tear!), lemon juice, olive oil and season with black pepper Mix thoroughly.

 

Stir salad mix into the couscous and chill before serving.

 

To make more – just double everything up – cous cous needs almost double its volume in water but not quite all and will double in volume.
